How to Perfectly Scale a Cake Recipe to Any Pan Size
You've found the perfect birthday cake recipe online. It looks moist, rich, and decadent. There is just one problem: the recipe calls for three 8-inch round pans, and you only own a 9x13 rectangular baking dish.
If you just pour the batter into your 9x13 pan, you might end up with a cake that is too thin, bakes too quickly, and dries out.
Baking is About Volume, Not Diameter
The biggest mistake amateur bakers make is assuming that a 9-inch pan isn't that much bigger than an 8-inch pan. It's just one inch, right?

To convert a recipe, you need to find the "multiplier." The formula is simple: Area of the Target Pan ÷ Area of the Original Pan = Multiplier
For example, if you want to bake an 8-inch round recipe (50 sq in) in a 9x13 pan (117 sq in): 117 ÷ 50 = 2.34
You would need to multiply every single ingredient in your recipe by 2.34 to fill that 9x13 pan to the correct height.

Adjusting Baking Times
