When NOT to Change the Temperature
You should never attempt to speed up the baking of delicate pastries, cakes, breads, or cookies by cranking up the heat.
Baking is a delicate balance between the batter expanding (rising) and the structure setting (forming a crust). If you bake a cake at 425°F instead of 350°F, the outside of the cake will rapidly dry out and form a hard crust while the inside is still raw liquid. As the inside eventually heats up and tries to expand, it will violently burst through the crust, leaving you with a cracked, volcanic ruin of a dessert.
