A Beginner's Guide to Roasting the Perfect Thanksgiving Turkey
Roasting a Thanksgiving turkey is the most stressful culinary task of the year for one simple reason: timing. You have mashed potatoes, gravy, green bean casserole, and hungry guests all relying on the exact moment that massive bird comes out of the oven.
If you don't calculate the roasting time perfectly, you will end up serving cold sides with a hot turkey, or hot sides while everyone waits another hour for the bird to finish.
Calculating the Roasting Time
Turkey roasting times are estimated based on weight. The standard rule for roasting at 325°F is:
- Unstuffed Turkey: 13 to 15 minutes per pound
- Stuffed Turkey: 15 to 17 minutes per pound
For example, an unstuffed 15-pound turkey will take roughly 3 hours and 15 minutes to 3 hours and 45 minutes.

The Thermometer is Mandatory
Time-per-pound is merely an estimate to help you plan your day. Ovens vary in accuracy, and opening the door to baste the bird lets out massive amounts of heat, slowing down the cooking process.
You must always use a digital meat thermometer to verify doneness. Insert the probe into the thickest part of the thigh, being careful not to touch the bone (which registers hotter than the meat). The USDA states that poultry is safe to eat when it reaches an internal temperature of 165°F.
Don't Forget to Rest!
If you pull a 165°F turkey out of the oven and carve it immediately, all of the juices will instantly flood out onto your cutting board, leaving you with dry, stringy meat.
You must let a large turkey rest at room temperature for 30 to 45 minutes before carving. This allows the muscle fibers to relax and reabsorb the juices. Don't worry—a large turkey retains heat incredibly well and will still be piping hot when you carve it 45 minutes later!
