The Secret to Perfect Rice Yields Every Time

Rice is the ultimate staple food, but it is also one of the most unpredictable ingredients when it comes to portioning. You pour a small amount of dry, hard grains into a pot, add water, and 20 minutes later the pot is overflowing.

Understanding exactly how much rice expands is the key to never running out of food at a dinner party (and never having a fridge full of leftover rice for a week).

The Golden Ratios of Rice Expansion

Rice expands because the starches absorb the cooking liquid. However, different varieties of rice absorb water differently based on their grain size and whether the bran layer is intact.

  • White Rice (Long Grain, Jasmine, Basmati): Triples in volume. 1 cup dry = 3 cups cooked.
  • Brown Rice & Wild Rice: Because the tough outer bran layer is still intact, these take longer to cook and tend to swell slightly more. 1 cup dry = 3.5 cups cooked.
  • Sushi (Short Grain) Rice: These dense, starchy grains pack tightly together. 1 cup dry = 2.5 to 3 cups cooked.

Planning Portions for a Crowd

When catering or hosting a large family dinner, how much rice do you actually need?

The standard culinary rule of thumb is to serve 1/2 cup of cooked rice per person as a side dish.

If you are serving 12 people, you need 6 total cups of cooked white rice. Based on the 1:3 ratio, you only need to start with 2 cups of dry white rice.

If rice is the main star of the meal (such as in a burrito bowl or a large stir-fry), you should double the portion to 1 full cup of cooked rice per person.
