How Much Pasta Should You Cook Per Person?

It is the oldest culinary joke in the book: you try to make spaghetti for two people, and you end up with enough food to feed a family of eight.

Because dry pasta expands significantly when cooked, eyeing the portion size is incredibly difficult. Here is the definitive guide to measuring pasta portions perfectly every single time.

The Standard Serving Size

According to the USDA, a standard serving of dry pasta is 2 ounces (56 grams) per person.

When cooked, those 2 ounces of dry pasta will absorb water and swell to approximately 1 to 1.25 cups of cooked pasta.

Note: 2 ounces is a standard "side dish" portion or a modest Italian-style "primi" course. If pasta is the absolute main course and you are very hungry, you may want to increase this to 3 or 4 ounces per person.

Measuring Without a Scale

If you have a kitchen scale, simply weigh out 2 ounces of dry pasta per person. But what if you don't have a scale? It depends on the shape of the pasta.

Long Pasta (Spaghetti, Linguine, Fettuccine): You cannot measure long pasta with measuring cups. Instead, grab a handful of dry spaghetti. A bunch that has a diameter of exactly 1 inch (about the size of a US quarter) equals exactly 2 ounces.

Short Pasta (Penne, Macaroni, Farfalle): Short pasta has a lot of empty space between the noodles, so you can use measuring cups. Generally, 3/4 cup of dry short pasta equals 2 ounces.
