Active Dry vs. Instant Yeast: What's the Difference?

Walk down the baking aisle of any grocery store, and you'll be faced with small glass jars and foil packets of yeast labeled "Active Dry," "Instant," and "Rapid Rise."

If you grab the wrong one for your pizza dough or sourdough loaf, you might find yourself waiting hours for a dough that stubbornly refuses to rise.

Active Dry Yeast

Active dry yeast is the most traditional form of commercial yeast. It consists of live yeast cells encased in a protective shell of dead cells.

Because of this shell, active dry yeast must be bloomed (dissolved in warm water with a pinch of sugar) before it is added to your dry ingredients. The warm water dissolves the shell and "wakes up" the yeast. If the water gets foamy after 10 minutes, your yeast is alive and ready to bake.

Instant (Rapid Rise) Yeast

Instant yeast is milled into much finer particles and has a thinner protective shell. Because it is so fine, it can absorb moisture rapidly.

This means you do not need to bloom instant yeast. You can mix it directly into your flour and salt. Furthermore, instant yeast acts faster than active dry yeast, often reducing rising times by up to 30%.

Fresh (Cake) Yeast

Found in the refrigerated section, fresh yeast is a soft, crumbly block that contains a high amount of moisture. It is highly perishable and only lasts a few weeks. Professional bakers love it for its robust, sweet flavor, but it requires much larger quantities than dry yeast.

How to Substitute Yeast Types

You can easily substitute one type of yeast for another, provided you adjust the measurements. Instant yeast is more concentrated, while fresh yeast is diluted with water.

  • Active Dry to Instant: Multiply by 0.75 (Use 25% less)
  • Active Dry to Fresh: Multiply by 3 (Use 3x as much)
